1 pound raw bacon, slices separated
1 bunch of scallions, chopped
8 large eggs
2 oz American cheese, shredded
2 oz shredded cheddar/mozzarella mix
1 1/2c whole wheat flour
Cook the bacon slices until crisp, saving the grease. As bacon is cooling, mix the flour and bacon grease until crust looks like sand grains. Add water in dribbles and mix until grain pulls together. Roll out crust between two sheets of waxed paper.
Grease quiche pan and preheat oven to 350°. Fit crust into pan, trimming edges as needed. Crumble bacon, add scallions, and cheese to crust in pan. Mix eggs, milk and spices, pour over filling.
Bake for 45 minutes or until done in the center
